This vintage inspired wedding cake features a pearlized damask pattern on the top and bottom tiers as well as diamond-like champagne bubbles on the middle tier. Sugar pearls cascade down from the 24 karat edged swizzle sticks and around the sugar clock (it really works!). While snowflakes are difficult to find outside these days they are plentiful on this stunning creation at the elegant Queen's Landing Hotel in Niagara-on-the-Lake this evening. This beautiful cake was set-up in the main ballroom at the legendary Prince of Wales Hotel today. While understated in its overall design the resulting impact is extraordinary. Each tier is lined in 'edible pearls' and the four large pearlized sugar flowers (edged in 24 karat gold) provide the 'glitz' for this simple but 'timeless' design.

This magnificent cake was inspired by its surroundings; a majestic Victorian home in the heart of Niagara-on-the-Lake presented numerous inspirations for this one-of-a-kind cake. The wedding reception was held on the lawns of this incredible property and every last detail was planned to a 'T'. Vintage inspired decor, including fabrics/tapestries/artifacts/flowers, were carefully placed to create the warm and comfortable atmosphere in the Windows Room at the Inn on the Twenty in Jordan.

The best part was the huge squeal of delight that little Alex let out when he saw his purple dinosaur birthday cake! In his honour we decided to name this guy Alex-saurus-rex! Happy Birthday Alex!!

Will the Royal wedding cake spark a new trend?

All eyes were on Kate Middleton yesterday morning when she emerged from her hotel to reveal the exquisite details of her now infamous wedding dress. Many of us were equally keen on seeing the design of the royal wedding cake!

The above photo (which appeared in the The Sun - UK) shows a spectacular view of the size and shape of this lovely cake. The choice of design was traditional resulting in a monochromatic eight-tiered cake with over 900 sugar flowers and very detailed piping. Underneath the fondant was traditional fruitcake which was served at a lunchtime wedding reception at Buckingham Palace for 650 close friends and family.

While some in the cake business weren't 100% impressed with the execution of some of the details the overall result was certainly impressive.

This cake will likely have a major impact on the wedding cake market going forward this year and into next year. The type of detailing seen on this cake is a departure from what brides have typically been ordering which is 'simple elegance'.

This royal cake is all about fine details and there is a romantic use of flowers (17 floral designs). The official royal website lists the specific meaning behind each flower:

NOTL Experiences Severe Windstorm

Incredible winds whipped up in Niagara-on-the-Lake today and many beautiful old trees that have stood for hundreds of years were taken down in an instant. Even a sidewalk was ripped right out the ground. While there were many branches strewn about and power was out for several hours everything returned to normal relatively quickly. Crews were out in full force working overtime to clear the debris away. The forecast for Saturday looks great so bridal couples can breathe a sigh of relief! Lemon cakes with sinful fillings ... here we come!

An inspiration from a nursery quilt was behind the creation of this wonderful safari-themed baby shower cake. The characters in the quilt were put onto the cake using a sugar patchwork method which included the look of 'stitching'. The recipient of this beautiful cake said that the cake was the talk of her shower!

Gingerbread 'Homes of Distinction'!

We were invited to demonstrate the creation of a gingerbread house (from scratch -- no kits) during the 'Homes of Distinction' Tour in Jordan this past weekend. Proceeds from tickets sales and other donations went to benefit the Niagara Life Centre. We had the privilege of working in the lovely kitchen at the beautiful Culp Century Farm House. The gingerbread house was set on a foundation of Rice Krispy Treats and fondant and it was literally built from the ground up using sugar-based ingredients! Tickets given out to people who made additional donations were tumbled about at the end of the weekend and a lucky person walked away with the gingerbread house as a prize. We're sure that our 'home' has found a good home for the holidays!

This incredible cake with satin, pearls and draping clasped by beautiful orchids (flowers provided by Pauline of 'My Bouquet Floral Design')was a feature of this fairytale wedding held at Queen's Landing just this past weekend. A Cake Extraordinaire for an Actor Extraordinaire!

This one-of-a-kind cake was custom-designed for a well-known Canadian actor who resides in Niagara-on-the-Lake. It was an exciting process to design film reels of real cake and also to model the character to his likeness. His jaw-dropping reaction in seeing this special cake gave us enormous satisfaction plus a keen interest in doing more work outside of wedding cakes.
